Gingerbread Scones

2 Cups All-Purpose Flour

3 Tablespoons Brown Sugar

2 Teaspoons Baking Powder

1 Teaspoon Ground Ginger

1/2 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/2 Teaspoon Ground Cinnamon

1/4 Cup Frozen Butter

1/3 Cup Molasses

1/4 Cup Milk

1 Egg Separated

Sugar For Sprinkling

Preheat oven to 400 degrees F.

In a large bowl, combine flour, brown sugar, ginger, baking powder, baking

soda, salt, and cinnamon. Grate butter with a cheese grater and add to flour mixture. Combine until mixture looks like coarse crumbs. In a small bowl, mix molasses, milk, and egg yolk until smooth. Stir milk mixture into flour mixture until just moistened. Turn onto floured surface and knead into a ball. Pat into an 8 inch circle shape and cut into 8 wedge-shaped pieces. Place onto parchment lined baking pan 1 inch apart. Brush with egg white and sprinkle with sugar. Bake for 15-20 minutes or until golden brown.
